These initially started as an experiment with leftovers. My girls' loved them so much that they've become a freezer staple.

Ingredients

Salmon fillet (or any other fish you like), cooked and flaked

2 big potatoes, boiled

Quarter tsp of mustard powder

1 egg

Large handful of grated cheese

Any veg you like (Frozen mixed veg (carrots, broccoli and cauliflower), spinach, peas etc.,) cooked

Handful of breadcrumbs or Matzo meal


Mash the potatoes and veg together. Mix in all other ingredients until combined. If the mixture is a bit wet, add more breadcrumbs until its mouldable. Mould into golfball sized balls.


In a frying pan, melt some butter. Add the balls and flatten them into cakes. Cook one side until browned, then flip and cook on the other side.


I serve them on their own for a quick, very nutritious dinner.


The proportions given above make around a dozen cakes. My girls will usually eat 2 or 3 each so the rest can be frozen to use at a later date.
